Curried Chicken or Vegetables with Rice

This is a quick version of a chicken / veggie curry all prepared in one pan so less washing up and you do not use too much gas! If you would like a veggie version as well just substitute the chicken for a few different vegetables that you have available like courgettes, butternut squash and mushrooms.

Serves 2

Ingredients

Olive oil
Medium onion
1 pepper, any colour
2 chicken breasts
1 tsp garlic powder
1 tsp ginger
2 tbsp. curry powder
3 tbsp. runny honey
3 tbsp soy sauce
8 tbsp. water
tin chickpeas
2 tbsp. coriander
1 packet of 2 minute microwave rice

Method

  1. Chop the onion and pepper
  2. Heat the oil in a large frying pan and add the onion, pepper, garlic powder, ginger and curry powder. Fry for a few minutes until the onion has started to soften.
  3. Dice the chicken or veggies and add to the pan and fry for 5 minutes until the chicken has started to brown
  4. Add the honey, soy sauce and water and fry for 15 minutes until the chicken is cooked through
  5. Add the packet of cooked rice, drained chickpeas and coriander and cook for an further 10 minutes
  6. Serve with nann bread if you have them
