This is a quick version of a chicken / veggie curry all prepared in one pan that is a big favourite of ours to cook in the campervan. As it is s one pot meal there is less washing up and you do not use too much gas! If you would like a veggie version just substitute the chicken for a few different vegetables that you have available, my favourites are courgettes, butternut squash and mushrooms.
Serves 2
Ingredients
Olive oil
Medium onion
1 pepper, any colour
2 chicken breasts
1 tsp garlic powder
1 tsp ginger
2 tbsp. curry powder
3 tbsp. runny honey
3 tbsp soy sauce
8 tbsp. water
tin chickpeas
2 tbsp. coriander
1 packet of 2 minute microwave rice
Method
- Chop the onion and pepper
- Heat the oil in a large frying pan and add the onion, pepper, garlic powder, ginger and curry powder. Fry for a few minutes until the onion has started to soften.
- Dice the chicken or veggies and add to the pan and fry for 5 minutes until the chicken has started to brown
- Add the honey, soy sauce and water and fry for 15 minutes until the chicken is cooked through
- Add the packet of cooked rice, drained chickpeas and coriander and cook for an further 10 minutes
- Serve with nann bread if you have them
