Below are some of the recipes that we cooked in Norway

 

BASIL CHICKEN PASTA

Serves One 

Ingredients 

3tbsp flour

Salt & pepper

1egg

2 boneless chicken thighs cut into large bite size cubes

1 tbsp olive oil

1 pepper diced

1tbsp dried basil

Chicken stock cube

100ml red wine

200ml water

Large handful of fresh pasta (or cooked dried pasta) 

Method 

1.     Put the flour, salt and pepper in a plastic bag

2.     In a bowl beat the egg and then dip the chicken into the egg

3.     Put the dipped chicken in the plastic bag and shake well until coated in the flour

4.     Heat the oil in a large frying pan. Add the chicken and peeper and cook until the chicken begins to brown

5.     Crumble in stock cube and add basil, wine and water and simmer for about 15 minutes

6.     Add the pasta and stir through to coat with the sauce

7.     Serve with garlic crusty bread

 

 CHICKEN & MEDITERRANEAN VEGETABLE BAKE 

Serves One 

Ingredients 

Olive Oil

2 chicken thighs

200g Mediterranean veg (peppers, onions, courgettes, cherry tomatoes)

1 tbsp dried oregano

1 tbsp soy sauce

1 tbsp runny honey

Seasoning 

Method 

1.     Cut the chicken and vegetables into to large chunks

2.     In a large frying pan heat the olive oil and stir fry the chicken and veg over a medium heat for 10-15 minutes until the chicken is cooked through and the vegetables are softened

3.     After 5 mins add the dried oregano

4.     Once the veg and chicken is cooked and the honey, soy sauce and season. Stir fry for a further 5 mins and stir to mix thoroughly

5.     Serve in a bowl with crusty bread. Make sure you get all the juices out of the pan when serving

 

 

POTATO AND SAUSAGE PAN STIR FRY

Serves 2 (we always made big portions and kept one for another evening)

Ingredients 

500g potatoes, cubed

2 tbsp butter

6 sausages

2 rashers of bacon

1 small onion roughly chopped

1 small courgette, sliced

75ml dry white wine

150ml vegetable stock

1tsp Worcestershire sauce

2 tbsp chopped mixed herbs

Salt & pepper 

Method 

1.     Boil the potatoes for approximately 10 minutes until softened 

2.     Melt the butter in a large frying pan and cook the sausages over a low heat turning until brown all over

3.     Add the bacon, onion, courgette and parboiled potatoes to the frying pan. Cook for about 10 minutes, stirring occasionally. 

4.     Stir in the white wine, stock, Worcestershire sauce and chopped herbs. Season to taste and cook over a gentle great for 10 minutes. 

5.     Serve with crusty bread

 

 

 

PLANNING AHEAD

As Norway has an expensive cost of living I am planning ahead and buying a few bits to take with us so hopefully we have the store cupboard items that we need.
